Artichoke, Goat Cheese and Chicken Pizza
Using goat cheese and nonfat ricotta instead of mozzarella skims fat, not flavor; a whole-wheat crust delivers a satiating dose of fiber.

INGREDIENTS
- 4ozgoat cheese
- 1/2cupnonfat ricotta
- 1whole-wheat pizza crust (12 inches)
- 1cup thinly sliced, skinless roasted chicken
- 1cupdrained and rinsed canned artichoke hearts, halved
- 2large plum tomatoes, diced
- 2tablespoonsgrated Parmesan
- 1tablespoonfresh oregano
PREPARATION
- Heat oven to 450°. Mix goat cheese and ricotta in a bowl; spread over pizza crust, leaving a 1-inch border. Top with chicken, artichokes and tomatoes; sprinkle with Parmesan. Bake until Parmesan is golden, 8 to 10 minutes. Top with oregano and serve.
