Rainbow Salad:
(Base)
Red
cabbage
Green
cabbage
Yellow,
red, green, orange bell peppers
Broccoli
Carrots
Baby
spinach
Spring
mix
-chop
all very fine like slaw
-I
make on Sunday for the whole week (7-8 days)
As
you eat I add:
Mushrooms,
avocado, cranberries or whatever veggie you like.
I
also add shredded Parmesan or Reduced Fat Feta.
-toss
with Ken's Lite
Asian
Sesame Ginger Dressing. (2tab= 70 cal but watch your sugar).
This
is soooo crunchy and good you can use it as a Side or the base of a salad.

You get all your veggies, fiber, low cal and very filling. This dressing is my
fav. But
Newmans
makes one similar. You could use any low cal vinaigrette.
